Granola

“Granola”:  used as a slang term describing a person who is hippie-like, a modern bohemian, environmentalist, or leftist in outlook. (Wikipedia)

OR it is this delicious bowl of goodness that you see above.

I always have some of this granola in the cupboard.  The recipe originally comes from one of my favorites, The Barefoot Contessa bcontessa I love Ina Garten’s style of cooking – it’s classic, simple, and delicious.  I changed the recipe a bit to suit our tastes (I like dried cranberries rather than cherries), and it’s a great healthy snack or dessert to reach for.

Cherry, Almond, & Cinnamon Granola – The Barefoot Contessa
Preheat oven to 350 degrees F

4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds
1 1/2 cups dried cherries, chopped
1/2 cup vegetable oil
1/3 cup good honey
1 teaspoons ground cinnamon

Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 20-25 minutes. Remove the granola from the oven and allow to cool, stirring occasionally so that it doesn’t stick to the cookie sheet. Store the cooled granola in an airtight container.
