In memory of Grammy Barbara, who passed away last week, my roommate made a batch of the American Chop Suey that she used to make for him when he was little. It’s a simple recipe, but it’s comfort food all the same.
American Chop Suey
1 lb. Ground Beef
1 lb. Elbow Macaroni
1 28 oz. can Crushed Tomatoes (add a second can if you prefer it more “soup-y”)
1/2 of an onion, chopped (optional – Gram knew my roomie didn’t like onions, so she always left it out for him)
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Boil a large pot of water for the macaroni. Meanwhile, scramble the ground beef in a skillet and cook over medium-high heat until it is no longer pink. Add the salt and pepper. After the beef is cooked through, add the crushed tomatoes and stir. Reduce heat to low and simmer until bubbling and hot. Turn off heat. Cook the macaroni per package directions (5-10 minutes). Strain it and return it to the pot. Add the meat sauce and combine. Season with more salt and pepper if desired. Serve and enjoy!
