Happy 100th Post!


I'll blow myself out

We roomies have made it to 100 posts!  It’s hard to believe that we’ve had 100 posts on the blog since we started it about a year ago.  We’ve had lots of fun so far, and we’re looking forward to seeing what the next year bring.  Hopefully, you’ll tag along with us!

Raw Apple Muffins
Source: Adapted from Mom, originally from The Breakfast Book, by Marion Cunningham

4 cups diced apple (peeled or not – according to your taste)
2 teaspoons baking soda
1 cup sugar
2 eggs, slightly beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flower
2 teaspoons cinnamon
1 teaspoon salt
1 cup dried cranberries

Preheat oven to 325 degrees. Grease or line 16 muffin tins.

Mix the apples and sugar in one bowl.  Add the eggs, oil, and vanilla to another bowl and stir to blend well. Combine the flour, baking soda, cinnamon, and salt in another bowl using a fork.

Stir the egg mixture into the apples and sugar, mixing well. Sprinkle the flour mixture over the apple mixture and mix well. This mixture is very stiff, so you may need to do this by hand. Fold in the cranberries gently. Spoon the batter into lined muffin tins, filling 2/3 of the way full.

Bake for 25 minutes, or until a toothpick comes out clean when inserted into the center of a muffin.
