Blue Cheese Stuffed Filet Mignon

We don’t eat out very much as it is, but if there’s one day a year that we especially try to avoid the restaurant scene, it’s Valentine’s Day. Commonly referred to as “amateur night” by the restaurant industry, this is one of the busiest nights for dinner out in the country.  A good reason to cook a special dinner at home!

Last year we cooked a special dinner at home, and we plan to do the same thing this year. If you’re looking for something special to make, we would highly recommend these blue-cheese-stuffed filets. We’ve enjoyed them on many a special occasion. They’re so decadent and juicy, and who doesn’t love a little blue cheese with their beef? Another bonus: if you have dinner at home you can drink as much wine as you want!

Blue Cheese Stuffed Beef Filets

Serves 4

4 (8-ounce) filet mignons
1 cup crumbled blue cheese
3 Tablespoons olive oil

Preheat the oven to 400° F. On the side of each filet make a 2-inch slit forming a pocket. Stuff each pocket with 2 tablespoons of the cheese. Season the filets on both sides with salt and pepper. In an oven-proof or cast iron sauté pan, heat the olive oil over high heat. When the oil is hot, sear the filets for 2 minutes per side. Place the pan in the oven and roast the filets for 6-7 minutes for medium-rare.
